Sweet Potato Challahs

I usually make pumpkin challah at least once in the fall, and set out to do so this time.  I was thwarted by the lack of pumpkin in mt pantry.  ( I could have sworn I had at least one large can in there...) I decide that seet potato would substitute just fine, and it did!  I think I might even like this better.

I pretty much followed a new pumpkin challah recipe I found online, but I almost never follow them exactly, and I veered off from the start by using sweet potatoes.  Anyway, they came out nicely and taste great, I added just a tiny bit of cinnamon, and there were occasional specks of sweet potato.

I have a real weakness for yams the garnet variety are my favorite.  I use them often instead of pumpkin..I love pumpkin but I'd rather have a sweet potato 'using yams with deep orange pulp' pie over pumpkin any day.  Did you use sweet potato/light skinned and pulp or yam/light to dark reddish burgundy color variety?

I never remember which is sweet potato and which is yam.  Or are they all yams?  Anyway, I'm embarrassed to admit this, but I used the canned stuff.  (Yes, in syrup and all.)  I drained them well and maybe even rinsed them a little and mashed them in the mixer using the beater.  I have no idea what they put in those cans.

I make sweet potao pie with the dard skinned/orange fleshed ones.  It's popular with my kids!

I'm with you on that!  I've always like sweet potato pie better than pumpkin!  I really like the yams with the pale creamy interior.  They're not as watery as the orange kind.

The Challahs look great.

I've always much preferred sweet potatoes also.

The King Arthur Sweet Potato sandwich rolls were one of the first recipes I tried. They came out perfect. To me they seem almost just like a Challah. The recipe only uses one egg for almost two pounds of dough however.
