Snowed in NC

Hello everyone, this is my first post here. I just started baking over the past few months and have had an absolute blast experimenting with sourdough, particularly with the formula here. I'm sure I'd still be making hardtack if it wasn't for the Fresh Loaf, so thanks! 

We're "snowed in" here in North Carolina today, so I decided to play around with different shaping techniques on my sourdough...

I'm still having trouble getting ears on my baguettes...

 

 

The same sourdough works just fine for pizza too!

Where in NC do you live?  I have relatives in Concord and Kannapolis.

I'm also in NC, in Salisbury, not far from Concord and Kannapolis! We got more snow in the past couple days than we normally get in 6 winters. For those who don't know, that amounts to about 8 - 10 inches. I too, took an opportunity. I taught my daughter to make sourdough bread. I only taught her a little of bakers' math and scaling ingredients, some mixing, a few methods of kneading (she likes the slap-and-fold) and a little about how to tell when the dough is ready for the oven. The one thing we didn't work on at all was shaping. You might be horrified if you saw how she got the dough into the loaf pan. But, the bread turned out delicious, regardless!

Thanks a bunch! I'm an hour or so away in Chapel Hill, and as a displaced Floridian, I feel quite like a fish out of water with all this ice!

Any suggestions on additions/modifications to "plain" sourdough? I'd like to try out different flour combinations, or maybe fruit/nut loaves, but don't really know where to start!

To begin, imagine what you might like to eat, or what you might like to try to make. Then type that into the search bar at the top right of this page. Someone has probably already done it, and has posted pictures and a recipe! Especially with the two things you specifically mentioned - "different flour combinations, or maybe fruit/nut loaves" I know there are plenty of those lurking around on this site! Type into the search bar the names of the flour and/or fruits and nuts you want to try, and you will probably find a post from someone who has done it successfully and can tell you how.

I lived in Mooresville and troutman for ages, in catawba county just half an hour from Charlotte. I sure do miss Lake Norman. Happy wishes from a newly planted American in Canada :)
