But how do they know it is the world's oldest leavened bread? It wasn't baked and was found millennia later. So something happened for it to not be baked and to be lost in time. They then deduce that it was leavened naturally so it must be the worlds oldest leavened bread. Here is where I think they sometimes fill in the gaps incorrectly. Any dough left, for whatever reason, will begin to ferment! That doesn't mean the baker meant to make leavened bread or knew anything of leavened bread.

Archaeologists find a small piece of something and before you know it they've built up a whole story about it. Often while reading these things i'm thinking there could be many other plausible explanations. I'd rather they just "how curious" and leave it at that instead of dreaming something up for a good story. Like when they find a fossil and all of sudden they rewrite absolutely everything. And everything is 100% true till they find the next fossil that forces them to do another rewrite.
