Maurizio's Sourdough Baguettes. The tell will be the crumb

I had to go off the reservation, against the formula script to get this bake done. Trying to do to much at once I fear I screwed the pooch with the warm bulk, and refrigerated too soon.

Mix/ bulk Grade - D

Shape/Scoring Grade - C (at best)

The crumb will dictate the overall grade.

Ah...... * I take a deep breath.

The sweet smell of success! Not perfect, let's call it very good. I resolved not to be so hard on myself.

I've also had a similar odd open crumb from this formula.

It is quite reassuring to end with results similar to what you experienced.

They look great, but how did they taste?

The perfect storm for skipping dinner.

1. I was busy &; preoccupied with cooking some wings for my bride's contribution to her work Superbowl party tomorrow, (Friday)

2. I skipped breakfast and lunch altogether.

3. My wife would be late home due to traffic

4. I opted to eat a whole baguette with some gourmet dipping oil from the local olive 🫒 mill. I did not miss the left over pasta one bit! The baguette was outstanding!

I do not think I could have cooked all those wings on an empty stomach and not snagged a few for myself. But a baguette with fancy EVOO does sound like a delicious dinner. Especially if accompanied by a fancy pale ale.

Except, as of recently my preference is for dark beer. Thanks for stopping by. The wings were a big hit. I made another double batch for us super bowl Sunday.
