Drain starter

Drain starter

my starter is successful and very active.  It separates in the refrigerator into the dough and a liquid (like beer).  Should I drain that off or as I have been doing mix it back in with the dough when I feed it?

i tried searching the forum but couldn’t find anything.  I read elsewhere suggestions both ways.

The liquid is called hooch (as in alcohol). The short answer is: either way should be fine.

As long as the hooch doesn't look moldy or have a particularly foul smell.  If it does, then don't use it.

I think you better feed it.  Next time you chill it, try putting it in less fermented while it still has some food to chew on.  Most likely time to feed the starter larger amounts of flour to starter.
