Poolish + sourdough loaf: two rode together

Two rode together loaf, like the movie by John Ford and James Stewart. This time I decided to ferment the dough with 20% stiff sourdough + 20% poolish. Great aroma and excellent flavour. I encourage you to combine sourdough + preferments.
