dough mixer - +/- 12 cup flour capacity

Can anyone help? I am looking for a dough mixing machine up to 12 cups flour - too much to mix by hand and too much for my KitchenAid to handle. An equivalent of the Bosch Universasl Plus 800W (which is not for sale in Australia). I'm getting pretty desperate as I normally make 3-4 loaves at a time. I would be very grateful for any recommendations or advice anyone can offer. Thank you

Hi Claude:

My recommendation to you would be the Haussler Alpha dough mixer. Here is the link below. It is a bit on the pricey side but well worth the money. I purchased mine from Germany last year and I make all kinds of bread including whole wheat bread. The website has all the information. Dough capacity is 5-6 Kilos.

I am thrilled that you ordered one. Check out some of the utube videos ,type in Haussler Alpha to see how they perform, their product is far superior than any other product out there. Let me know how you like yours after you given it a try at baking breads.

Hey Ann Check this out - have you had this problem with yours? I saw this on the net.
"The Alpha mixer is beautifully made and very sturdy and we have fine results with it, but it has one disadvantage and that is that with certain doughs (esp. with wetter doughs) they tend to climb/stick to the hook and just spin around without any kneading action. This problem is more prominent with smaller quantities of dough 500 – 1,5 kg and not so much when making a full batch of about 4.5 kg in one go. We have removed the plastic security cover so we can ‘press / hold’ the dough down with a very big spatula during kneading, this works very well but you have to be very careful as the engine is very powerful and you can hurt yourself. This helps to get a better kneaded dough even with the full 5kg quantity of dough but with an expensive machine like this it should not be needed. We have the one speed Alpha, there is also a two speed available. But if we had to buy a new mixer at this moment in time, we would not choose the Alpha again."

Yes it does climb with small amounts of dough , remember this is a large capacity  machine and was made for large quantities of dough. I have yet to find a machine where the dough does not climb. I have had a kitchen aid, and it does climb on the paddle if the appropriate amounts dough is not used. There is no perfect machine, it just depends on what's important to you. I would not change my mind about buying this machine. If you would like to get further information regarding how this machine truly works, you may want to contact by email the weekend bakery. They bought a Haussler Alpha a couple years ago, and they use it in their bakery so the machine is getting a good workout. They would be the best person to contact regarding any issues with the machine since they have had it for quite some time now. I emailed them before I purchased mine and up till now I am very pleased with my purchase. I purchased the one speed. Let me know how it works out for you.

I also bought a MagicMill Verona Assistent N30 - Swedish Electrolux  (not as dear as the Haussler) . I can't wait to receive them.  I can use one for Danish Pastry and the other for bread.  I had a look at weekend bakery.  The Haussler quality does everything I need.  My hands will be very grateful for the welcome relief from kneading.  :o)   I had a long chat tp the manufacturer of Haussler and they were very confident about their product and German made is always superior.

I am glad you decided to keep the alpha, you will not be disappointed. I just used my machine today to make an apple strudel, it came out divine. I can't say enough good things about the machine, and I know you will be like a kid in a candy store when both your machines arrive, and will save your poor hands from any more wear and tear. Have fun with your new machines.

Pleasant Hill Grain expects to have the Haussler mixers for sale in the US, starting in October 2012!

Thank you for your response but I live in Australia.  US Voltage is 110V  versus ours 240V.  I appreciate your time. :>)

I have ordered one direct from the German manufacturer.
