Pizza Dough Recipe Needed

Hi, I'm fairly new to the board.  This is my second message to the board.  BTW, love this site.  My question is:  I would like a good pizza dough recipe that would fit in a half sheet baking pan.  I know there's a lot of recipes on the board for Pizza Dough, but am not sure if they are suitable for such a half sheet pan.  Thannks!

Have you looked at "A Pizza Primer"?

Floyd's Pizza Primer has what has become my 'go-to' pizza dough.  It is highly adaptable to different styles just by tweaking the hydration a little.  Half a recipe would probably fill a half sheet with a thin crust.

Jim Lahey's new book called "My Bread" has a recipe for pizza that produces enough dough for two 13x18 inch rimmed baking sheets. You can make all of it and use just what you need and freeze the rest for up to one month. Or just make what you need.   page 117, and good pictures about the process too.

I've made this so many times

I've made this so many times I've got it memorized. It helps that everything is either a 1 or a 3:

3 c. flour
1 c. warm water
3 T. olive oil
1 t. salt
1 t. instant yeast

Combine, knead, rise, shape, top, bake.

Easy to double, quadruple, refrigerate, freeze, make substitutions, etc.

Don't need it. Add it if you

Don't need it. Add it if you want. Most flour you buy has a bit of malted barley, which has enzymes that break down starch into sugar. That's usually plenty to feed the yeasties.

If you like sweet-tasting crust, add sugar, brown sugar, honey, malt syrup, agave sweetener... ok, you get the idea.

Don't get the wrong impression from people on the site who give you percentages and weights in grams for all their ingredients. Bread-making is incredibly forgiving. You can add a little bit of almost anything and still get good bread!
