Daniel's Rustic Bread

Has anyone purchased or watched the DVD on www.danielsrusticbread.com site? The DVDs are performed by baker Sam Sidawi and if you buy two you get a bakers couche and couche basket. I came across this site because I need a bakers couche and was looking for a cheap one.

Interested to know if anyone has any thoughts on the DVDs.

Flatbreads Book?

Does anyone have a particular recommendation for a book that is either entirely about flatbreads or at least contains a nice large section on them?  Honestly, I'm mostly interested in the Indian flatbreads, but I'd love to learn some of the Eastern Europe, Mediterranean and African flatbreads as well.

I'd also appreciate links to any of your favorite recipes on the Fresh Loaf or elsewhere.

Hello dear freshloavers, i want to buy a bread baking book , we actually do not have in Egypt all the flour varieties that you talk about, we have APF, bread flour , whole wheat flour , barley , we do not have rye flour .

I want to buy a new book , but i am afraid , after buying it , i can not use it because of the unavailable ingredients,anybody can suggest a good title to me , also good price, still have the shipping bill to pay.

I want to try Amazon , i did not buy anything before through it.

I have the 6 major bread books that everyone usually references here.  I read and re-read and learn continually.  This forum is an excellent addition to that.

However, there is always the possibility that someone does not want to do Artisan bread; does not want to learn the complexity of it all.  But rather just wants to make a simple loaf of bread and not get sucked into the vortex of the rocket science of it all.

Best book on rye?

I might be heading out to purchase some bread books later this fall but I am not sure which to get or to get more than one. Essentially I want a book that gives a broad spectrum of ryes, which I find that most american authors kind of shy away from, 1 ny style rye, 1 pumpernickel and maybe a light rye.

What I am looking for is books with formulas an technicues for 50%-100% ryes, not exclusively, but at least a couple.

Missing Page!!!

Hi!  I just got the book Artisan Breads in Five Minutes a Day by Jeff Hertzberg and Zoe Francois, but when I got part way through the book I discovered that a page was ripped in half.  I was wondering if anyone else has this book and would be willing to send me the page 131.  It is the last directions for the Montreal Bagels recipe.  I tried going back to the store and told them about it, but they said that they couldn't do anything about it.  That is the only page missing and would just tape in the directions if I can get them.
