Cherry and Strawberry..

Cherry YW Sprouted winter wheat SD with roasted balsamic strawberries, Japanese toasted sesame seeds , purple carrot and black mission fig :)

exchanged a loaf of my sourdough bread with the organic shop for a bunch of organic cherries ( which were considered not in good condition) i tot i could cut them up and make cherry YW. it turned out very bubbly :) this cherry thing had been stuck on my head for sometime since Ian's beautiful very very cherry bread post. 

i want to impart more red into the dough.. had some strawberries in the fridge. i did a balsamic strawberry jam before for my very bitter (80% cocoa) chocolate layered cake sometime ago. why not.. cut up the strawberries sprinkled some sugar and 2 tblsp of aged balsamic, popped it into my mini oven for 10mins at 150C. came out nice, gooey and caramelized. scraped into my mini moulinex blender gave it a few pause. tasted yummy. 

and all that went into the dough plus a small grated purple carrot, a cup of toasted sesame seeds ..(after autolysed)

added soaked figs with amaretto when i did my shaping.

cherries cherries  whats not to like?  Very well done again and the scoring is extra fancy this time.  The crumb came out nice and open too!  Nice baking Evon

scoring was extra fancy cos i used a new blade!! smooth and precise .. Gillette :)

Very nice crust and crumb with Interesting mix of flavours. Does the crumb has the tang of balsamic vinegar? My mouth is watering as I was typing balsamic. Mmm... I love balsamic!

Hi Annie, i used an aged balsamic vineger, it has more sweetness than tang. you could reduce a normal balsamic vineger to get that syrupy and sweetness too. it enhanced the sweetness of the strawberry very well. taste a great natural flavor of strawberry instead of a artificial taste.

I'm glad I was able to inspire you.  Your bread looks perfect and I love that open crumb and nice dark crust.  I am dying to make another cherry loaf for myself but Cherries right now are way too expensive here...almost $7 USD per pound so I have to wait.  I think some raspberries may go well in a bread along with some blueberries and some blueberry or raspberry balsamic to help it along :).  I think you will like the bread I am working on now..I won't ruin the surprise so you will have to wait a few days...

Anyway, glad you were able to come up with such a beautiful loaf...I never had any doubt!

yes, cherries over in Malaysia is expensive too, especially organic cherries. oh i love raspberry n blueberry too.. looking forward to your post. do hope it will be soon, don't keep me in suspense!!

What a lovely crust, crumb and color.  The flavor must be very delicious.  I can see why they wanted a loaf of your bread for the cherries.

Wow, any type of bread with strawberry filled, always count me in.. that is my favorite one. In fact I also inspired by http://www.berriedinchocolate.com/collections/chocolate-covered-strawberries, dipping strawberry into choco is very much unique and taste good.
