I love bread

I just found this site.  I have been making (trying to make) artisan style bread following Reinharts book "the bread bakers apprentice" for the last 4-5 years with varying success.  I know that my bread has improved, and it certainly tastes great.  However, I want it to look good too, and that is where I am working now.  I stumbled onto this website searching for "oven spring problems" which is what happened to my sandwich bread loaf tonight.  It exploded out of the pan and cracked beyond the edge of the score during the first 10 minutes of baking.  However, I'm sure it will taste great.

I am looking forward to reading my way through this website!

you mentioned taste and the looks of a loaf. I just realized that the good thing about baking bread is that there is no fix relation between the two. Great tasting bread can look awful and when I view a loaf as a failure (because of the looks), it is gone in one hour anyway. Guess there must be a hidden metaphor to real life here.

Happy baking and please share pictures!

Cheers,

Jw.

Welcome hmcinorganic. It sounds like you have the basics if you have been working PR's BBA for a few years. What kinds of breads have you been baking that you want to improve on? There are lots of folks here that bake from this great book and many others.

I look forward to seeing your work in the future.

I found this site two years ago.  Love it here and plan on staying for a very long time.  I love bread, probably too much! :-)  Gonna love the aroma when a loaf is baking in the oven.  Almost intoxicating! ;-p
