Advice on a flour mill

I'm taking the plunge in getting a flour mill but need some advice.

 

I want to have a wide range texture from corn meal to fine flour. I'm not sure why you would do cracked grains but I'm still fairly new at bread making. Maybe herb grinding as well if the mill is capable but that's not a requirement.

I was looking at the komo but the fidibus 21 indicates it isn't for whole kernel corn. I'm interested in the new lee mill but it is more than I'd like to spend. I love the grainmaker but it is just outside the budget as well.

VitaMix Dry Grains Container?

Hi All!  Long time lurker, rare poster here!  

I am the keeper of two sourdough starters and bake many types of breads. It's my therapy!

 

I am just now starting to experiment with grinding my own grains for flour.  Yahoo!!  So excited.

 

I have the dry grains container for my Vitamix.  Eventually I may splurge on a "real" flour mill but I want to see how I like using my own flour first.  (I am a dedicated KAF flour user and that is what I am used to.)

Retsel for Nixtamalized Corn Masa

Hi - I currently own a Nutrimill (used it for years now, my family and I love bread from fresh milled flour along with all our other baked goods). I'm considering adding a Retsel Mil-master or similar to the baking arsenal.

Besides the adjustable nature of the Retsel, I'm curious if anyone has tried the masa attachment(as that would put me over the edge)? I can't find anything on the internet as far as reviews and given the money and time it takes to get one I'd like to have at least one positive recommendation prior to making the investment.

Want to buy fresh flour in Salinas/Monterey CA

Is there anybody nearby (Salinas/Monterey/Gilroy CA) who mills their own flours and would sell me some to play with before I invest in my own mill and supplies?  Storage is a big issue.  Every 6 weeks I go to the famous Gayle's Bakery in Capitola after a doctor's appointment, and will ask if they grind their own.  However, the freeway one direction is always a parking lot for 15+ miles and sitting causes major pain, so driving there more often is not an option.  I'll check with our  two good bakeries in MontereyPacific Grove - also a 30-40 minute drive one-way.

Grain choice for home milled flour for quickbread

I've been happily milling red fife wheat for awhile now for my sourdough breads to great success.   I'd now like to make some quick breads such as banana bread, cranberry walnut, maybe quince, and would like to home mill.  Any suggestions for the type of wheat berries (or other grains?) to get?  Modifications to usual quickbread recipes?

Dealing with bugs

Okay, one bug. One little larvae of an insect that came out of my beautiful flour mill. I heeded the instruction to plug a tea bag up the shoot to prevent this very situation. I clean out the shoot each time I use the mill.

The instructions state not to use liquids, so boiling water and strong chemicals cannot be used. I read in this forum to scrub the mill or grind some rice to get rid of whatever is inside the mill.

Are tea bags sufficient? Should I use bay leaves?

Wisdom requested. I do not want to get rid of my lovely flour mill.
