Hoagie rolls

I've always wanted to bake hoagie rolls but for some reason was too intimated to try. Maybe because these involve shaping multiple little loaves at once? I don't know but I'm hooked! These were fun to make and they came out great! These are also a great way to practice shaping, as you have to do so many at once. I baked 12 loaves in al. Thinking of making sourdough rolls next, topped with sesame seeds! 

After mixing the dough, I divided and shaped into balls then I flatted and rolled each piece after resting

What is it about making bread that is so therapeutic? 

I sprayed rolls and oven with water to create just a bit of steam.

I’d have to call that a smashing success. What a great way to learn to better shape and score. What was the hydration?

thank you! I was pleased...hydration was 57% - bibs red mill artisan flour. Sugar 3%, salt 2%, oil 5%, and IDY 1.13%.

 

20 min mix, divided into balls and rest, then flattened, rolled, and shaped and rise for about an hour.  I already want to made again :)

WOW! 57% sounds low. Does that take into account the 5% oil? I am surprised.

It does sound low but doesn’t include the oil. 57% water only and I think the addition of all that oil made them so soft. I’d be open to bumping that up mayyyyybe just a little. But the dough did come out pretty soft and easy to handle. So I probably wouldn’t change it much. Thinking of giving it a try?

I would like to try it, but that will have to wait. I like the idea of shaping and scoring practice. At this time I am preparing a Community Bake that will feature pizza. I am up to my ears getting this ready for the weekend, Monday at the latest.

That sounds like fun - tell me more I'm not familiar with a community bake? And I loooove pizza so I'm all ears
