Tangzhong and Affordable Loaf Discussion

Lets knock around the idea of using a Tangzhong with The Bread Lab's, Affordable Loaf.

TFL user, WooWoo, brought up the idea of using the Tangzhong with the whole wheat bread. I thought it could be genius! For those that are not familiar with the Affordable Bread Project, check this out.

Here are a few thoughts and hopefully others will join in with pros, cons, and other suggestions.

  1. would it make the bread softer
  2. might make the bread sweeter if oats were used. Result, maybe less honey?
  3. will it keep the loaf fresher, longer
  4. what should we expect if the tangzhong used whole wheat, potato, oats, or any other ingredients

Since the goal of the Affordable Loaf is less staling, softer chew, mild flavor - something that a child might eat, how do you foresee a Tangzhong working with this bread?

I appreciate the input and help of others.

I’ve used a Tangzhong on a number of occasions. For those that like soft white bread or rolls, this formula is killer.
