Vincent has a lot of great videos on Youtube, I encourage you to check them out. He has one which shows him working a revolving oven with baguettes, he works at a pretty quick speed.
Thanks for the hint! The croissant video was featured on 3 Quarks Daily, an old-fashioned blog that links to interesting stuff. I didn't realize that I could get MORE cool baking videos. 3QD seems to be on a baking binge lately.
