I didn't see any yeast or starter for the preferment in the recipe sheet. What did you use?

Side by side my two latest bakes.
The Left side is flaxseed, the right side is purple Barley. All other things equal. 86% whole grain! High gluten white flour only in the starter.
These two blogged bakes, 7/23, 07/24, prove that all the extra water ( 85% hydration) in the original approachable bread formula was totally unnecessary.
