My yeast free bread is uncooked in the middle!

Hi everyone! I just recently bought a Tower bread maker machine and have been trying to make yeast free bread in it. However every time it comes out cooked on the outside but uncooked in the middle (especially at the bottom of the middle). I've tried many different settings, but nothing works! I weigh all my ingredients, and so I can't imagine the proportions can be that far off. Can anyone suggest what the cause could be? I would be very grateful for all your advice.

Can you give us more details such as what is your recipe?

I've used different recipes and different raising agents - but mostly bicarbonate of soda and sometimes baking powder or both. I use either yogurt or buttermilk which I make myself from milk and lemon juice also. I've tried different flours according to the recipe I'm using: wholewheat, plain or bread flour. But whatever I use the same thing happens. Could it be something to do with the machine or the fact that I'm not using yeast?

Does your bread machine have a setting or recipes for yeast-free breads? Most quick bread recipes (i.e. those raised with baking soda or baking powder) are quite different from yeast bread recipes. Yeast bread recipes require mixing, then a resting or proofing time, then a 'punch down' and more proofing, before baking. The baking time and temperature will probably be quite different from most quick bread recipes too, so unless your machine has a specific setting for quick breads I'm not surprised it didn't work. The 'rest' phase would mean the leavening agent would already be working (as baking soda and powder will both do once wet), and you should bake these types of bread immediately; won't happen in a regular yeast bread cycle in a machine. It might just be easier to mix the batter / dough by hand, put it in a pan and bake it in the oven. The timings would work better then.

Thanks - that was very informative! My bread machine is a gluten free bread maker and has a setting for quick breads which I've used, and I've also tried the regular settings which in some ways work better - but the same thing always happens.

But it doesn't have a yeast free setting - so it seems like you are right!

Sorry, just one more thing. I just read your answer again while I'm a bit more awake this morning and now understood that you were saying that the quick bread setting would be the best. I tried that to begin with but it was doing the same thing! Any other ideas? Should I try putting a little less liquid?
