carrot bread?

I have an overabundance of carrots from my garden and would like to incorporate them into bread somehow. I was wondering if anyone has made a yeast bread with carrots as an ingredient?

a bread machine recipe I altered

1 1/4 c water

1 1/2 c grated carrot

1 tbsp butter

1tbls honey

1 1/2 tsp salt

1 c white flour

2  1/3 c ww flour

2 tsp yeast

 

You can mix in bread machine, wait til end of 1st rise, then put in a pan, let rise, finish in oven.

 

I usually double and mix by hand.

 

Sorry, it's not a very sophisticated recipe/technique, but it's something I do in a hurry, and it's good. Especially this variation:  Throw in a tablespoon of this spice mix: 

1/2 tsp ginger

1/2 tsp garam masala

1/2 tsp cumin

1/4 tsp chili pdr.

Oooh! Have you ever been to Mimi's Cafe? They have a wonderful carrot and raisin bread.

I've made it at home but it tends to be on the sweeter side. I also have a bit of trouble with the oiliness bread so you might experiment with the oil. Anyway, here is the recipe.

Thank you for these recipes. I will give them both a try. I have never been to Mimi's cafe so this will be new to me.
