Pizza crust experimental extravaganza

Not long ago, I read Animal, Vegetable, Miracle by Barbara Kingsolver and was inspired to make homemade pizza. I had a packet of pizza crust mix from Jungle Jim's, so we used that and some terrible sauce and cheese, and were horribly disappointed. "We can do better," we said, and so I tried a sourdough crust (1 cup starter, 1 cup water, 3 cups flour or something like that) and it was better (plus we used better sauce), but I wanted to develop a good quick recipe.

Oops! Forgot the salt

Today I took my large amount of accumulated starter out of the fridge, and made pizza dough with it. I rolled out one for tonight's dinner, and put 4 balls in the fridge. It was only as I rolled out the first one that I realized I hadn't added salt to the dough. I added extra salt to the sauce and salted the baked pizza as well. All things considered, it wasn't too bad. But I'd like to get the salt in the dough for the remaining ones. Any suggestions?

A Hello and Pizza Interjection

This is my first post here, so I just wanted to introduce myself a little, then get on to my topic.

I'm a hobbyist baker that has tried several recipes with success in most of them. I have an 13 year background in food industry, of which 11 were spent in the pizza business. 3 of which was an ownership role. Great, fun, I must say, and very rewarding and satisfying.

I wanted to comment on 'The Pizza Primer'. I felt that was a well written piece, and I commend the author. The picture shown looked professionally made, and pretty derned yummy to boot! Well done.
