Is baking soda with higher price better?

Hi,

There are different prices of baking soda to choose in supermarket.

What are the differences among them in the ingredients or baking result?

Higher price, better (healthier)?

Which one(brand) would you like to buy? Why?

Baking Soda should just be pure Sodium Bicarbonate, with no other ingredients.  Different brands should not matter that much.

 

Baking Powder is a different matter, as it's  a mixture of stuff designed to chemically react either in the wet dough/batter, or in the oven, or both.  Different brands have different mixtures, and lots have been written about it by folks more knowledgable than I.

Arm and Hammer Baking Soda $2.5 1kg,

Dr.Oetker Bicarbonate of Soda $1.6 200g

Their prices are so different,

Does that mean no one would buy Dr.Oetker baking soda

if they are the same?

If they are chemically the same then the only reasons people would by Dr.Oetker at over 3 times the unit cost would be (a) they don't need (or can't afford) a full kg, or (b) pure marketing.

Actually, I'll take back some of that snark.  It appears that Dr.Oetker is a standard brand of NaHCO3 in the UK, perhaps similar in reputation as Arm and Hammer is in the US.  If you found it priced in US$, then it's probably an import aimed at a local British ex-pat community.  The importation costs are probably what's tripling the prices.

But the basic concept that baking soda is baking soda remains.

I would suggest looking at the ingredient list on the label. It should be nothing but sodium bicarbonate. And if it says that - there should be no difference between the products. As an aside Arm and Hammer says their baking soda is pure socdium bicarbonate so there is no potential for anything "better".
