This attempt at a sourdough my bread did rise but it would not stand up to making a loaf it sort of an over sise pan cake about 3 to 5 in high. It was a bit sticky when baked should it have more flower? how firm should it be. any help is welcome

It might be helpful to post your recipe so people can see how much flour,water and starter is used.

You mentioned the dough was sticky.Sticky dough can make a fine loaf of bread but,again, it depends on why it was sticky-too much water?type of flour? rye flour used? not enough mixing or kneading or stretch/folding or resting?

Also-Did it rise til double? Over- rise? Over-proof? Shaping technique?Temp baked?

It could be many things.We all started as beginners somewhere and had to learn (and UN-learn) many things. I have been on this journey,too ,and have discovered bread to be both incredibly complex and yet amazingly simple-esp sourdough. Keep going with finding a way to be successful with 1 recipe and build from there.Start with a simple recipe!

So give us some info to work with and you will get lots of ideas.
