Recipes with french flour?

Hi,

I moved recently to France. Now it is time to start again with bread baking because I don't want to pay 10Euros/kg for bread. Do you have any recipes for French whole weat sourdough breads, please? Or is there a chance somebody in France is baking breads form the Hamelmann book with French flours, please?

book that might interest you is: Le pain L'envers du decor by Frederic Lalo.

He has written this book using French flours and it seems to be widely available.  I found it to be well written and easy to folow...

Sorry, but this book costs 250Euros. This is a bit too expensive. But thank you for your suggestion.

that, but didn't believe my eyes and just assumed it was a mistake.  I actually own the book and I would have remembered paying that much for a single book. It is advertised at 62Euros at Librairie Gourmande  (in Paris) which is where I got mine about 5 years ago. (link http://www.librairiegourmande.fr/boutique/description.php?lang=1&path=112&id=1645)

Sorry for such an extravagant suggestion, but it is a splemdid book. :>(

Jane is a French baker who used to post frequently on TFL. I am  pretty sure she used French flours.

I think there are recipes for bread using T55 and T65. You can use the Search engine on the left side of this website and search for T55 and T65. It should bring up links to several recipes.

So a baguette is really expensive there? It's $2.75 for a baguette here.

No, baguette is cheap (1.50-2Euros a small loaf in a good bakery), but I never buy this really. I want more the bread with Kamut or spelt, or whole wheat. If  raisins, nuts, or seeds are involved and tis organic, the price gets huge. It ranges in my shop between 3.55-10Euros/kg and they don't sell baguette. More "artisian" bread. 
Funnily, cut bread from a 3kg loaf is often cheaper than a single load (when comparing the kg price).
And having a new ofen, I want to start baking again. :-) (Or trying...) 

France is pretty expensive in terms of food.
