Still pondering proofing...

So I made this loaf again, with some suggestions from the last go-round.
This is how it turned out:
Texture-wise, it was a little gummy, almost underbaked seeming. First time I've had that. Also, as before, the lame dragged across the dough, barely tore, didn't score at all. Oiled the lame before, no go.
So does this look under proofed? Passed the poke test, which I'm not sure means a whole lot. But impossible to score, and not sure on the crumb. Just can't seem to figure proofing out at all. Any advice will be happily accepted.
