Pretty happy with my try at professional Kaiser roll shaping. Far from perfect but hey, not too bad!
Who will step up and run a dedicated Kaiser roll community bake? I want to see the whole membership body of the bread club become as proficient in Kaiser roll shaping as we are with baguette shaping!
I made Txfarmer’s pumpkin rye Kaiser rolls for thanksgiving. They made a great turkey sandwich! Might be a good one to try.

Somehow, I’ve never had the desire to make baguettes, which is odd, since I will try almost anything. But maybe one day this forum will inspire me!

Pumpkin is a natural dough enhanser too. Lovely crumb color.

I prefer malt to sugar (zucker) and only water. In a pinch, use brown sugar. This 500g flour recipe makes 12 @ 70g each. I added 8g salt instead of a pinch. Dipping the half risen roll tops in milk (after inverting) sure does speed up the baking time and gives a nice satiny shine finish. Whoops.

honestly I have to watch every time I make them, because I forget something. I found this one to be very helpful. I love a good kaiser roll. (another thing I miss about NY)
Thanks for dropping by! Funny thing, that was my reference video for the folded poppy seed version! Sadly, even in N.Y.C., you will be hard-pressed to find a good Kaiser roll. Not to boost, but these had that crackly eggshell crust and soft interior! Smile... Some days you eat the bear, other days the bear eats you. This day was a win!
