I re-read some of Hamelman's advice too late. He writes that you should never put a layer of braid on top of another layer UNTIL THE EGG WASH IS TACKY. If you put the next layer on top while the egg wash is still wet on the lower layer (which is exactly what I did) then the upper layer will almost always slide off.
