have been baking a lot trying to keep my mind busy. Most of what I am baking , I should not be indulging in often. However, last night I made two batches of healthy biscuits.
1. Chocolate chip, whole wheat with monk fruit sugar. (For my wife)
2. Same formula substitute almond for chocolate.
300 g white whole wheat
135 g AP flour
1 tsp baking powder
3 LG. Eggs
1 cup Monk fruit sugar
1 cup olive oil
1 cup chocolate chip or almond
Spice profile
Gram marsala
Cinnamon
Espresso powder
Almond extract ( only in the almond)

I also made a six pack freezer batch of N.Y. style dough.

They look lovely! I love biscotti and I like your spice profile.
Truth be told that flavor profile worked great with the chocolate. Not so much with the almonds. Next time I think same spices, but bump up the cinnamon for the almond version. The chocolate are perfect!
This must be telepathy ;) I was anyway toying with the chocolate version.
They look and sound great Will. I've still to this day never made biscotti, I rarely eat them.

That was the goal. I am pleased that I hit the mark. What was surprising to me is, sugar is the first ingredient in chocolate chips! I like the results I am achieving using monk fruit sugar. My main barometer, is that my wife doesn't seem to mind the substitution at all. I am still sticking to healthier food choices. Albeit, more relaxed, and sustainable. Keys being. Food type choice, moderation with less desirable choices.
