Plötzblog is a German bread baking blog by Lutz Geißler. Last year, it went to a subscription format and most of the recipes are now behind a paywall. Some free recipes are found in a free archive and every month, Lutz offers some other free recipes based on a theme. This month, the theme is Roggen im Fokus—rye in focus. If you like rye, you might find some interesting recipes there.

Dream/goal of mine when the budget's not so tight is to get past that paywall and try all the recipes! He knows German bread.
Which one should I try for a starter rye for someone who's never baked with rye before? I have experience baking whole wheat einkorn sourdough but that's it for sticky ancient grains.
Aaaaah! I see that in February's collection he released his recipe for whole wheat einkorn sourdough bread! I was just looking at it longingly the other day but it was behind a paywall on his regular - oh no, it's still behind a paywall, the paywall just loaded and now it's blocking the instructions. :( Bummer. My loaves have been really falling off lately and I don't know what I'm doing wrong. (By the way, Einkornvollkornsauerteigbrot - how's that for a word?)
I don't believe I have made any of the recipes Lutz listed for this month, so I can't judge the difficulty level of them. But I will say I have had an easier time handling rye than either spelt or einkorn. Rye is very sticky, but since gluten development is usually not part of the process, it mostly comes down to shaping the sticky dough. You might want to try a mixed wheat-rye if you're concerned about working with rye.
And, aren't those German compound nouns great?
There are plenty of other German language bread baking sites out there - personally I don't worry too much about the loss of Plötzblog.
