pumpkin loaf too wet

I don't recall where I found this recipe, but I like it, except it turns out way too wet even after 1:10 and the center fell.

Pre-cooking the purée and spices seems pretty smart to me.

Any thought as to what is best to adjust down?

I did change the flour ratio to 2.25c AP and .5c oat flour.
Also, I used 1/4c EVCO and 1/4c almond oil (pour off from natural almond butter).
1/4c Greek yog & 1/4c kefir (instead of bmilk)
Kind of thinking perhaps drop the kefir (bmilk) or Greek yog.

 

2 1/2 cups (10 ounces) all-purpose flour 
1/4 c oat flour
1 1/2 teaspoons baking powder 
1/2 teaspoon baking soda 
2c unsweetened pumpkin purée 
1 teaspoon salt 
1 1/2 teaspoons ground cinnamon 
1/4 teaspoon ground nutmeg 
1/4 teaspoon ground cloves 
1/4 teaspoon allspice
1/4 teaspoon cardamom
1 cup (7 ounces) granulated sugar (I used 1tbsp less)
1 cup packed (7 ounces) dark brown sugar (homemade in this case)
1/2 cup vegetable oil (coconut)
1/2c Greek yogurt
3 large eggs 
1/4 cup buttermilk 
1 cup walnuts, toasted and chopped 
1c choc chips
1c raisins hydrated with 2 tbsp bourbon

Combine pumpkin purée, salt, cinnamon, nutmeg, and cloves in a large saucepan over medium heat. 
Cook mixture, stirring constantly, until reduced to 1½ cups, 6 to 8 minutes. 

Remove pot from heat; stir in granulated sugar, brown sugar, oil, and yogurt until combined. Let mixture stand for 5 minutes. 
Whisk until no visible yogurt remains and mixture is homogeneous.  

Whisk together eggs and buttermilk. Add egg mixture to pumpkin mixture and whisk to combine. 

Fold flour mixture into pumpkin mixture until combined (some small lumps of flour are OK). 

Fold walnuts, chips raisins into batter. Scrape batter into prepared pans.

Bake @350º until skewer inserted in center of loaf comes out clean, 45 to 50 minutes. Let breads cool in pans on wire rack for 20 minutes. Remove breads from pans and let cool for at least 1½ hours. Serve warm or at room temperature.

That’s a huge amount of liquid ingredients for a “ quick bread” recipe. 

As an example go to the banana bread recipe I posted on that thread a little while ago. I have made it successfully for years. It has 2 eggs and 1/4 c oil and 1/3 c white and 1/3 c brown sugar. It fills a 9x5 glass pan. Bakes perfectly in 60-75 minutes at 350°. 

Anyway your recipe seems way off to me and I am not surprised it didn’t set up. 

You can substitute the thickened pumpkin for the bananas and add your spices. It will turn out perfectly. 🙏

2c AP flour ( can use bread flour still works)

1 tsp. Baking soda

1/2 tsp Baking powder

1/2 tsp salt

375 g mashed bananas ( must weigh!)

1/3 c packed brown sugar 

1/3 c white sugar

1/4 c unflavored oil

2 lrg eggs beaten lightly

3Tbsp milk

Whisk all the dry ingredients thoroughly. Mix all wet ingredients thoroughly.  Fold together thoroughly. Use PAM or butter to grease pan unless using a reliable non stick . 

9 x5 or 8x 4 IT MAKES A DIFFERENCE. Glass or metal makes a difference. 

Bake a 350°- at least 60 min. Cover lightly with foil if getting too brown. I like the bigger 9x5 glass  . As Moe said take a clean table knife and stick it straight down in the center of the loaf almost to the bottom. Pull it out. It should be 100% clean. If not add 10 min. Check again. 

If all your ingredients are cold it will take longer to bake. So set everything out an hour before measure everything and let set before completely mixing

I know the original recipe I used, that I have lost, used 3 eggs and a fair amount of oil. I don't recall any dairy in it, though I do like the idea of a bit of Greek.

Have to look at from a bakers % method 

Sub your pumpkin for bananas add spice. It’s incredibly good and moist and very little oil. I’ve subbed applesauce as well. Everything works. I have added raisins and nuts. It’s always perfect. 

For a really great presentation grease the pan then sprinkle Demarara sugar all over the inside of the pan then fill. Oh boy it’s so good on every slice. 

Anyway good luck. Oh the easiest way to cook a puree  down to thicken it  is in a double boiler. 2 nd easiest way is bake at a low temperature . 🙏
