I'mI am within 100 g of two perfectly squared loaves.

Your shapes look very good. It’s fun to release these pretty shapes and slicing is a breeze.

Look forward to seeing your crumb . I can’t eat sprouted grains. I’m glad you discovered them. If you search TFL you will see a number  of folks were sprouting and milling .

Happy Baking

However, at this point in the journey milling is not something I want to explore. I never say never. In the beginning I was sure the sourdough starter was way to involved for me to tackle. I even traded a book that was primarily sourdough for one that was geared to commercial yeast. We use to have a book review forum I think that is gone now.

I do try, to be artistic. However artistic is not my forte. That being said, with time patience, and a lot of help from my friends here at the bread club, I have become pretty good at bread baking! The leaves are basil. I took the idea from Benito, ( now he is an artistic, talented baker!) He uses edible flower blossoms. Since I had no edible blossoms in my garden, I used the basil. Let me know if you are interested in my 100% whole grain to formula. It is sourdough and pretty fool proof. I am also happy to share other formulas with a lower percentage of whole grain.

Your name reminds me of my grammar school days.

Even thought, I can be slow on the uptake, eventually it sinks in. Remember the days when a formula said," with experience you will be able to tell"? In the beginning I would be confused and think I will never reach that point. With repetition and a lot of reading I am able to "know" somethings. The fun is, you never out grow learning, and adapting in this hobby. Smile...
