YW levain Blueberry/ Candied Pecan Boules

I was given fresh picked local blueberries and went searching for a way to use my Apple-Fig YW levain. Shaio-Ping had posted a Sourdough version with frozen berries years ago. I read through and adapted . 

It is a challenge! Getting the dough made was easy and my YW is crazy active. The challenge was the candied nuts , I had never cooked sugar syrup that hot and then getting everything folded into the dough. But it got done . 

Dough grew like crazy in a few hours. I managed to get the fruit and nuts in and laughingly plopped not shaped the boules. They rose beautifully before and during the retard overnight. 

They were easy to bake in my preheated graniteware roaster. 

Flavor of the blueberries is great. The bread isn’t sweet at all. Texture is lovely and light not cakey at all. There are 200g of pecans but they aren’t as dominant as I thought/ hoped they’d be. 

I’m going to think about this more and decide if I would do it again. My husband just tried the bread and loves it , says goes very well with a slice of aged cheddar!

As I was writing the title I thought the same thing lol. I am not nearly as wonderful at details. 

It does taste very good , I gave a bag of slices to the friend who picked the berries. She was going to have it for part of her supper. 

In looking up more formulas a number of folks including Breadsound, she used to post here, used dried blueberries. I have several pounds of those. They would be easier to incorporate. 

I’m pleased with this one and plan to make French Toast tomorrow with some , I have lovely NY state Maple Syrup yummy 😋 

Definitely my kind of bread 😆.   I’m more of a cherry fan but blueberries are excellent as well.  I like my pecans plain but candied have to be tasty as well.  I’ll have to give those a try.  What flour did you use?

So I ground spelt and subbed in Marquise as I’m now out of spelt. It was a very wet dough even with me using fresh berries , she used frozen which as she says is a terrible mistake! 

It’s going to be French toast for some of it this morning. 

Thank you Ian! Just toasting the pecans is plenty of flavor but the candied ones are yummy!

I’ve used freeze dried raspberries and they worked well.  I have used fresh cherries and dried cherries and cranberries all work well.  I would never use frozen though as they would be too wet and probably mushy.

I use dried fruit , not freeze dried all the time. I have my “ no soak” hydration method. 

If you want a great treat take your dried blueberries and cherries and put them in White Balsamic Vinegar. It is outstanding after a week or so the color and flavor of the vinegar and the fruit is amazing . Top your salads .
