86% whole grain sourdough country Pullman loaf bread.
Whole wheat - 70%
Prefermented high gluten flour - 14% (100% hydration)
Dark Rye - 10%
Whole Spelt - 10%
Purple Barley - 10%
Water 73%
Salt 2%
Honey 6%
Olive oil 6%

Total final dough - 2400 grams

It turns out the flowers I am growing are toxic. I am glad I used the internet to verify if they were edible.  I will look into some pansies.

Nice and flavorful I bet with all those whole grains.  You need to get your own mill and you won’t regret it 😀

Who knows maybe some day. When I first started this journey I said never sourdough. Eventually, that changed.

Thanks for the compliment. A good test is even the granddaughter eats pop- pop bread no problem.
