Toast

I’m new to bread making and am going to bake my first sourdough loaf soon. I don’t have any proofing equipment yet so what can I proof the loaf in?  I haven’t even decided what shape to make yet, so suggestions are appreciated. 

I have a 9 x 5 loaf pan for gf bread (KA) would that work?  I have a pullman also. I have ceramic pasta bowls about 9.5 x 3 in.

Is a well floured tea towel lining a bowl. Place the dough in the bowl and use the edges of the towel to cover the dough. If you want a boule. 

Or just use your loaf pan or pullman. 

Out of all the methods I find pullman loaves excellent! Very good if you don't have an option to bake in a Dutch Oven. Has a lovely crust and very uniform so every slice is the same. 

Proof in whatever is available. To tell the truth - and I've said it before - I use 3 or 4 tools (and that's too many) for the entire loaf. Everything is done in 1 bowl - then transferred. I would suggest a pan at first - once the bread is consistent move to another form. Enjoy!

I love pans too! The crust can still be a beauty with scoring if you like.

 

You can proof the loaf freestanding, without a banneton or pan.  Of course the dough has to be able to hold its shape, but many if not most doughs do.  You shape the dough into a log or ball (find videos of ways to do this on line) and put it onto some support like a baking sheet covered with parchment paper. Cover the loaf loosely with plastic wrap while it proofs.

Most of my loaves are proofed this way.

Just about any bowl- or basket-shaped container can be utilized in a pinch.  Line the container with a tea towel or something similar (not terry cloth) well-floured with rice flour and you’ll be good to go.
