Orange & Vanilla Sourdough

Today's bake - Orange & Vanilla Sourdough

This bread is a mix of fresh milled hard winter red wheat and white whole wheat flour and AP flour combined with some orange zest I had in the freezer and vanilla extract. I was going for a mild orange/creamy flavor profile that I think I've achieved.

 

Tasting Notes

Crumb - Sweet/Dairy with notes of milk, orange, and vanilla

Crust - Resinous with notes of french roast coffee beans and vanilla bean

Grain Character - moderate with a slight taste of cooked oatmeal

I’m a big fan of this flavor combination.  Great idea to use the orange peel.  Do you think the orange flavor was too strong or just right?

It was mild to my taste, but I am partial to stronger flavors. In this bake each of the 2 loafs only used 11 grams of zest, so kind of mild.

My inspiration for the flavor profile was the Creamsicle: vanilla-flavored ice cream and orange-flavored sherbet.

I’m a big fan of creamsicles as well.  I tried something similar many years ago and used a orange liquor but it messed up the fermentation and was an epic fail.  I will have to give your version a try.

I had some orange juice in version 1 and the acid in the juice destroyed the crumb. Lesson learned.

Tony, Great looking loaves and the crumb is perfect!  For the vanilla extract, is that about 1 tsp?  Did the crumb retain as much of that flavor as you wanted or did it seem more pronounced in the crust?

Thanks  - I think it is about 1 tsp. The vanilla flavor was more pronounced in the crumb but it could use a little more if that is to your taste. I think these flavors are mild enough that there is a fair amount of latitude in quantities used.

Tony when I read the orange and vanilla I immediately imagined that this would have hints of creamsiles in your bread.  It sounds really lovely and the bake is nice and bold.
