Ooni starter failing to grow

I’ve just gotten an Ooni pizza oven and woke up my starter about a week ago to have a go at making sourdough bases. The starter is really old and very stable, and having fed it every day for about a week it was doubling in 4 hours. 

However, I then followed the Ooni instructions to decant 50g and add 100g bread flour/100g warm water and absolutely nothing happens for hours! 

Can anyone help with this frustration please?!

If you fed it more flour and water than usual, just give it time. It will eventually rise. Maybe placing it in a warm spot would help as well, if your kitchen is not warm enough.

I had it like that in the past as well with my starter after feeding it. It stays still for hours and then explodes, suddenly rises tall and fluffy.

I agree with Mariana.  If your previous feeding schedule was 1:1:1 with 4 hour peak (which is what mine does too) and now you are switching to a 1:2:2, it will definitely take longer to rise.  If I want to start a dough first thing in the morning, I will do a 1:2:2 feed at night, which will take all night to rise/peak but it will be ready first thing in the morning.  Not sure if this is what was going on for you but thought I would mention it.  Have fun with your oven!
