Lemon White Chocolate Mint Bread help!

Every summer I get this delicious lemon white chocolate mint bread from the farmers market. I will absolutely continue to buy it in the summer, but what am I supposed to do the rest of the year? And now I don’t even know when our farmers market will open again!

So during this time of quarantine I’ve been practicing to try to figure out what the bread is. I think I’ve got the flavor right, zest of one lemon, four squares of white chocolate chopped, and a teaspoon of mint plus about a fourth cup of sugar. But I can’t even figure out what kind of bread the base is! It’s a round loaf, and is soft but not a quick bread. I’ve attached a picture of it to see if that will help. Everything I’ve made is too crusty! Any ideas?

If you want something with less crunch, then enriched dough is the way to go. Replace some (or all) of the water with milk, add some butter and egg, maybe yoghurt, the possibilities are endless. Think brioche, dinner rolls etc.

Could I do a no knead in the Dutch Oven, replace some of the water with milk and lower the temp?

Sure, though I think you don't need a Dutch Oven for that. That is more for when you want crispy crust I think.

Also I found this recipe, could be worth a try.

I actually saw that recipe but it's not quite what I've been eating :) Definitely no oatmeal.

It really seems like a simple white bread, a little sweeter, with the add-ins.

I'm really struggling to know what the base bread is? White bread? I don't think it's brioche. The texture is a little more ciabatta?

In that case probably a white high gluten bread that has some oil or fat in it (adds richness and chewiness)...maybe start with a ciabatta dough then, could be already it :)

I've spent the morning researching (distractibaking, right??) and I'm wondering if a challah would do it? The recipes that look less cakey look pretty similar. I think I'll try it tomorrow :)

Hi!

I believe I know the exact same bread you are referring too. I have purchased the same loaf several times at the farmer’s markets in my area (southeastern Colorado). The bakery is Styria Bakery and while they are open and taking orders at their Denver location during this pandemic, they don’t ship orders. Knowing this, I decided to research and find a recipe. What do you think of this recipe? The picture resembles that of the bread sold at the farmer’s markets.

The Styrian Bakery site this bread originates from, lists the bread you refer to alongside stollen, an enriched dough.  

Agree with BaniJP to think brioche (enriched dough).  Think Challah with less butter, eggs and sugar.  Maybe a touch of white rye flour, judging from the color.

To me this is a mint white chocolate babka, a brioche dough with chocolate (or in lesser form, cinnamon).

Google Jewish babka, of the Seinfeld type.  There are many types of babka, varying widely in form, texture and flavor.  The Syrian bread you refer to appears to be a free-risen loaf of enriched (brioche) dough with chocolate and mint.  This is the same as Jewish babka, without the loaf pan and maybe less butter and sugar.

I know I’m a little late to the party, but I found this link when I googled lemon mint white chocolate bread. My daughter and I were at the Dillon Farmers market yesterday and were very happy that Styria Bakery was actually there. My daughter loves this bread so we bought a loaf! After reading all the comments, I took a look at the ingredient list on the bread wrapper and this is what they list;unbleached unbromated white flour, dried potatoes, white chocolate chips, corn oil, sugar, yeast, natural lemon flavor, sea salt, mint. I’m not much of a bread baker, but from this, it sounds more like a potato bread base rather than an enriched bread base. Hope this helps!!

I was at the Farmers market and asked the lady from Styria, she told me it was a potato bread base.

Hi everyone.  I am also very late to this party.  My name is Shannon and I am the owner of Styria Bakery II.  Thank you all so much for comments about the bread.  I am glad so many of you like it.  Yep, it's a potato bread.  I just wanted to reach out and let you know that you can get the bread in the winter. When the farmers markets are over, we do tons of holiday craft shows, and after the new year, we do the Colorado Garden and Home Show.  You can also do a special order and pick it up at the bakery in Denver.  I am not sure why someone thought we didn't ship, We do.  We ship bread all of the time for those of you that live to far away to pick it up.  I will have our schedule of holiday craft shows on our website this week.
