The  long cold Autolyse.

 With the nice result of my last 65% hydration sourdough baguette bake. I was exploring an easy, yeasted, slightly higher hydration baguette formula to mess around with tomorrow. I came across this one, posted by dmsnyder. I quickly began the autolyse. Of course I made the obligatory changes to the dough weight and method, ala The Roadside Pie Kings preferences and idiosyncrasies. This is the finalized version of the formula, it incorporates my exact step by step procedure.

Thanks for the encouragements guys! Going to start another batch tonight! 

 Al, I consider myself to have been lucky to have your expert tutelage! Only a fool would not take a masters advice when offered! My progress is 100% due to your direction! Thank you sir! We had NY cut steaks ready to go last night. The wife took one look/ sniff at the baggies and said lets keep the steaks in the refrigerator and have cold cuts for dinner! We walked to 8th street and did exactly that!

But I'm just another goofball who worked through and figured out the key to making these.  Don't shortchange your own gumption.

Reminds me of an old story.

The son who struck it rich takes his parents out on his fancy new boat.  He's got the whole regalia thing going, decked out from head to toe - captain's cap to deck shoes..

He asks his father what he thinks about the whole scene.  "What do you think Dad?  I've got the clothes, the boat, the inboard motors, the sonar, the wheel.  Pretty much have it all".

The father replies "Listen son.  To you you're a captain, to your mother you're a captain, and to me you're a captain.  But to a captain, you're NO captain."

My moral to the story is: to professional baker, I'm an amateur.  Maybe a decent to good one, but still an amateur.
