Double the Starter

Toast

Hi! This is my first post. I´ve a quick doubt. My first starter as 120 grams and is on the fridge, it is fed once a week. Looks healthy. I need to increase my starter to the double. Should I just not discard and add 60g of flour and 60g of water? Thank you.

If it’s on the fridge, you need to feed daily. If is in the fridge, take it out and do what you said 2 or 3 times before using it for bread.

you are keeping your starter.

If it is not in the fridge, then I would definitely discard 3/4 if it and feed it 60 g each of water and flour. Once it has peaked, feed it again doubling the water and flour til you have the amount you need for your recipe.

If it is in the fridge, take 10 g out, and feed it 20 g each water and starter. Then keep doubling the feedings until you have the amount you want. This is s very simplified way of doing things but in both cases, you need to get your starter up to speed.

Once again thank you.

I put the starter in the fridge after it was very bubbly, so it is in the fridge now. It has 120g and I want to make it to 250g (ish). If I only take 10g and feed it with 20g it will take a long time to reach the 250g.
