That is a great video. You learn a lot just watching the baker build, test, and handle the dough. Hanging the breads to cool them is something I have read about but not tried. The paper forms are convenient, but more elaborate "doves" can be hand shaped. TFL has a nice article from TX Farmer with a series of photos that include a magnificent hand shaped dove and her instructions on how to shape your own. I have made a few beautiful "center piece" Columba di Pasqua in the past, thanks to that post by a very skilled baker. This year, I plan to make an Easter braided bread with colored eggs tucked into the braid. Bread baking is fun, especially at holidays. Happy Spring Baking Everyone, Embth
