Purple Polenta Porridge Loaf

I've been infatuated with colorful loaves for a while now. These next two weeks I'll be making purple. Tonight was purple corn polenta, later this week will be purple carrot, and next week will be purple sweet potato!

I winged this recipe. About 70% bread flour, 20% polenta, 15% wholewheat, 15% semolina, 15% starter, 3% salt, and 79% hydration.

Great loaves. Was the polenta cooked in a porridge or just added with the flours.

 favourite breads  at the moment are porridge breads.

the polenta was cooked into a porridge and I added it in with the starter after autolyse!

Love that color and perfect crumb.  I recently made some rolls with polenta and always love the nutty flavor it adds.  I've never seen purple corn polenta around here.  Where did you buy it from?

Yeah I'm amazed by the texture and taste it added to this loaf! I got the purple polenta from a local farmers market but I've used Bob's Red Mill Blue Cornmeal (from a health food store, but it is available on amazon) before to make polenta and it's very very similar. Same coarse grind and turns purple when mixed with or cooked with water!
