sponge cookies

Toast

Does anyone have this type of sponge cookie with candid fruit.

They look like they were shaped in a loaf and baked and then sliced. What is their texture like? Light? Crispie? Cakie?

Hard to tell from such a small photograph but that green in particular doesn't look like any candied fruit peel I know.

The sponge looks a little like pain d'épices. Maybe a stollen-like cake?

What country did you buy it in?

Looks like to me.  First baked in a loaf, cut and then baked again.

in an effort to dry out the crumb and possibly add more browning if needed.  the package looks loose so humidity might have entered the package and softened them up.  Similar pictures can be found under "tropical biscotti," confetti biscotti, and biscotti (cookie) and as we have no other clues such as taste or texture.  A popular dough contains almond paste for example.  It looks like the fruit in the photo is simply mixed colored citron.
