Astrid from Paulchen's Foodblog selected oat as theme for this month's Bread Baking Day.

BreadBakingDay #9 - bread with oat

I got inspired from zorra for this recipe & the method from iban.

For more information about sourdough starter you can read Susan post about Sourdough Starter from Scratch .

60 g (1/2 cup + 1 Tablespoon) oat flour.

374 g (2 1/2 cups) whole wheat flour.

670 g (4 1/2 cups) high gluten white flour.

1 1/2 teaspoons salt.

2 teaspoons sugar.

2 teaspoons yeast.

46 g (1/2 cup + 1 Tablespoon) milk powder.

2 Tablespoons oil.

90 g (1/3 cup) sourdough starter.

3 cups water.

1) Place all ingredients in the bowl of mixer; beat 10 minutes to make soft dough.

2) Cover dough and let rise in warm place until doubled in size, about 1 1/2 hour, stretch & fold every 30 minutes.

3) Divide dough into 2 pieces

4) Shape each piece into round loaf, cover; let it rise in warm place until doubled in size, about 40-60 minutes.

5) Meanwhile, preheat the oven to 500 F.

6) Before baking dust flour over the top of the loaf, slash the bread.

7) Reduce the heat to 400F, bake for 15 minutes with steam, & another 15 minutes without steam.

2 teaspoons yeast.

3 cups white flour.

 3 cups whole wheat flour.

4 Tablespoons oil.

2 teaspoons sugar.

2 teaspoons Salt.

4 Tablespoons dry milk.

2 cups warm water.

116 g sourdough starter.

Wheat bran for roll the dough.

1) Place all ingredients in the bowl of mixer; beat 10 minutes to make soft dough.

2) Cover dough and let rise in warm place until doubled in size, about 30 minutes to 1 hour.

 3) Divide dough into 16 pieces.

5) Shape each piece into a ball .cover; let it rise in warm place until doubled in size, about 30 minutes.

 6) Roll each in wheat bran to a 16 cm round.

7) Bake on hot baking surface for 1 minute per side.

Makes 4 large or 8 small.

 1 recipe 10 Minutes Dough ( I use 2 whole wheat flour cups +3 white flour cups in this recipe).



1) Preheat the oven to 550F.



2) Divide dough into 4 or 8 pieces.



3) Shape each piece into a ball.

4) Roll each piece to round.



5) Place onto oven trays or hot baking surface for 2-3 minutes.

I post this recipe before for JMonkey, you can see it here.

 

1 Tablespoon yeast.
1 Tablespoon honey or sugar .
2 1\2 cup warm water.
3 cups white flour.
1 1\2 cups whole wheat flour.
2 teaspoon salt.
2 Tablespoons olive oil.

1)Preheat the oven to 550 degrees.

2)Combine yeast,honey and 1\2 cup water in bowl,cover,stand in warm place about 10 minutes or until mixture is frothy.

3)place all ingredients + yeast mixture in the bowl of mixer ,beat 10 minutes to make a soft dough.

4)Divide dough into 12 pieces.

5)Shape each piece into a ball .cover,let rise in warm place until doubled in size ,about 1 hour.

6)Roll each to a 16 cm round.

7)The old method i bake Pita Bread on hot baking surface for 1 minute per side.

8)The new method I bake pita bread on wire rack over baking pan for 2-3 minutes.you can see it here.

Ulrike (Küchenlatein) will host BBD #03, and she is asking everyone to make a sourdough-leavened bread, preferably rye.

it is my first time baked bread with starter and rye , my bread came out great!

My first starter

756 g rye starter.

2 cups cup dried dates.

2 Tablespoon Anise seeds.

4 cups  white flour.

1 2\3 cups whole wheat flour.

1 2\3 cups rye flour.

2 2\3 cups water.

1 teaspoon salt.

2 Tablespoon olive oil.

1)In the bowl of mixer, mix the flours, dates, Anise seeds, water, and starter until just combined, about one minute.

2)Allow the dough to rest for 30 minutes.

3)Add the salt and oil and continue mixing about 4 minutes.

4)Cover and let rise for 1-2 hour.

5)Divide dough into 2 pieces.

6)With lightly floured hands, shape each piece into a rough oval.

7)Cover loaves loosely with plastic wrap and let rise for 1 hour.

8)Bake at 400 for 30-40 minutes.

4 + 3\4 cups flour,unbleached,whole wheat,or a mixture of the two.
4 Tablespoons butter,divided.
2 Teaspoons yeast.
1 Teaspoon baking soda .
2 Teaspoons salt.
2 cups water.
2 tablespoons evaporated milk (low fat).

for Topping:
*milk.
* olive oil +zaatar.
* sugar.
* toasted sesame seeds.

1)place all ingredients+ 2 Tablespoons butter in the bowl of mixer ,beat 10 minutes to make a soft dough.

2) add the rest of butter to the dough and knead it by hand until well combined.

3) Cover and let rise for 1-2 hour.

4) Divide dough into 4 pieces.

5) shape each piece into a ball.

6)Roll each ball into a 20cm round.

7)Brush the top with milk ,prick the dough all over with a fork, and sprinkle it with sugar and toasted sesame seeds or olive oil +zaatar .







 

8) Bake at 550 for 7-9 minutes.

1 cup white flour.


3\4 teaspoon baking powder.


1\4 teaspoon baking soda.


1\2 teaspoon ground cardamom.


3\4 cup dried dates.


1\3 cup hot water.


1\2 cup butter.


1\2 cup brown sugar.


1 teaspoon vanilla.


4 eggs.


1 teaspoon salt.


1 cup Chopped walnut.


1/2 cup fresh dates, chopped. (Optional)


1 tablespoon toasted sesame seeds.

1) Preheat oven to 350 degrees.

2) In a small bowel mix together:1\3 cup hot boiling water + 3\4 cup dried dates. (let it cool before use it).

3)In the bowl of an electric mixer cream together butter and sugars for 2 minutes.

Add eggs mixing well, Reduce speed to low and add dates mix, dry ingredients, vanilla, fresh dates and Chopped walnut; mix until well combined.

4) Pour the batter into the prepared (9 inch pan), and smooth the top. Sprinkle with toasted sesame seeds.

5) Bake for 20-25 minutes. Serve with Arabic coffee.

milk mixture:

1 cup milk.

1 tablespoon olive oil .

Filling:

450 g Feta Cheese .

chopped fresh mint.

1 teaspoon sumac.

1/2 teaspoon olive oil .

 *mix the Filling ingredients.

For dough :

2 1/8 cups white flour.

1 cup whole wheat flour.

1 1/4 cups warm water.

1 tablespoon dried mint.

1 teaspoon dry yeast.

1/4 teaspoon sugar.

1/2 teaspoon salt.

1/4 cup olive oil .

1)place all ingredients in the bowl of mixer ,beat 10 minutes to make a soft dough.

2)Cover and let rise for 30 minutes.

3)Divide dough into 8 pieces.

4)shape each piece into a ball.

5)Roll each piece through pasta machine set on thickest setting,fold dough in half,roll through machine,repeat rolling several times,dusting dough with extra flour when necessary.

6)Roll dough through machine ,adjusting setting so dough becomes thinner with each roll,dust with extra flour,when necessary.roll to second thinnest setting (1 mm thick),making sure dough is at least 12 cm wide.

 7)Cut into 2 pieces.

8)Brush it with milk mixture.

 9)Place 1 tablespoon of Cheese mixture,roll pastry over filling.

 10)Brush the top with milk mixture.Cover and let rise for 20 minutes.

6)Bake at 400 for 20 minutes.

This Bread is quick ,easy and tasty.it is good for breakfast or for afternoon snack with tea.

*2 cups white self-raising flour.

*1 cup whole wheat self-raising flour.

1 teaspoon dry yeast.

1/2 teaspoon baking powder.

1/4 teaspoon salt.

4 tablespoons oil.

4 Tablespoons rose water.

2 Tablespoons sugar.

3 Tablespoons evaporated milk (low fat).

2 eggs.

1 1/2 cups warm water .

1/4 cup dried dates,chopped.(optional)

*Home made white self-raising flour:1 cup white flour + 2 teaspoon baking powder.

* Home made whole wheat self-raising flour:add baking powder to whole wheat flour as above to make whole wheat self-raising flour.

1)Beat eggs and sugar in small bowl with electric mixer until light and fluffy.

2)Stir in dry ingredients,milk,oil,warm water and rose water.

3)Spread mixture into prepared pan,sprinkle with toasted sesame seeds and Saffron.

4)or you can grease the pan ,sprinkle it with toasted sesame seeds and Saffron than Spread the mixture over.

 

 

5)Bake at 350 for 35 minutes.

for dough:

1 cups warm water

1 cups warm milk

2 teaspoons dry yeast

2 cups whole wheat flour

3 cups white flour

1 teaspoon salt

6 tablespoons olive oil

1)place all ingredients in the bowl of mixer ,beat 10 minutes to make a soft dough.

2)Cover and let rise for 30 minutes.

after 30 minutes

3)Divide dough into 16 pieces.shape each piece into a ball.Cover and let rise for 20 minutes

after 20 minutes

4)Roll each ball into a 21cm round,brush the top with olive oil .

5)Top each with a tablespoon of lamb mixture.leaving a 1cm border.

6)Bake at 450 for 9 minutes.

7)Serve with yogurt .

*for Topping:

Lamb or Beef mixture:

500 g ground lamb or beef

4 medium onions

2 medium tomatoes

fresh cilantro(optional)if you want your topping red do not add it.

2 tablespoons tomato paste

2 tablespoons pomegranate molasses

salt and ground pepper

combine ground lamb or beef,onions,tomatoes,and cilantro in food processor or food grinder than add tomato paste,pomegranate molasses,salt and ground pepper

*for vegetarian you can use portabello mushroom or cooked brown lentils instead of meat.
