Sourdough Dates Anise Bread

Ulrike (Küchenlatein) will host BBD #03, and she is asking everyone to make a sourdough-leavened bread, preferably rye.

it is my first time baked bread with starter and rye , my bread came out great!

My first starter

756 g rye starter.

2 cups cup dried dates.

2 Tablespoon Anise seeds.

4 cups  white flour.

1 2\3 cups whole wheat flour.

1 2\3 cups rye flour.

2 2\3 cups water.

1 teaspoon salt.

2 Tablespoon olive oil.

1)In the bowl of mixer, mix the flours, dates, Anise seeds, water, and starter until just combined, about one minute.

2)Allow the dough to rest for 30 minutes.

3)Add the salt and oil and continue mixing about 4 minutes.

4)Cover and let rise for 1-2 hour.

5)Divide dough into 2 pieces.

6)With lightly floured hands, shape each piece into a rough oval.

7)Cover loaves loosely with plastic wrap and let rise for 1 hour.

8)Bake at 400 for 30-40 minutes.

Never would have thought to add dates to rye bread, Zainab. (Dates in chocolate chip cookies, though, with hazelnuts...) Lovely-looking loaves and good pictures, as usual. I have a feeling that's not cream cheese you topped with honey in the last photo. Or is it?

Hi browndog,

I'am not huge  fan of rye,so I though if I add dates and Anise seeds to rye bread it will make it more accepted to me ,so I like rye bread now.

 in the last photo I topped with qaimar and honey.

 qaimar (Iraqi cream)and we use it alot in arabic gulf area :

I love your idea of this combination.  It gives me an idea of modifying something to make a kind of sticky toffee pudding bread.  HEHEHE. :o)  Drool.

Anyway, your loaves are beautiful and, again, I love hearing about the different foods you eat that I've never heard of such as the qaimar.  I could eat that slice of bread right off the screen.

Zainaba, another excellent effort. I do envy your ability.
Could you explain exactly what quaima is. Is it similar to creme fraiche? or whipped cream mixed with a little yoghurt? M

 Hi maggie,

you can make you own qaimar by shake  creme (full fat milk) for 5-6 minutes .

Hi there Zainaba,
From your photos and description, quaima looks like semi-whipped cream. I couldn't make it from full cream milk here as it is only 4% fat.
Your preserves in the 2nd photo look more-ish Could you tell us what they are? Thanks, M.
