Parmesan French Bread

  These are really nice looking...are these your no knead breads?  Please show your recipe used.  You have some of the best no-knead looking loafs I've seen!  We love parmesan at my house.  Thank youSylvia

I've been working all summer to find the right formula . . . they're so much easier to make while were on the boat.    My favorite no-knead recipe is a combination of Artisan Bread in 5 Minutes and Cook's Illustrated Almost No-Knead.   Mix once and I've got bread for the rest of the week.   Here's a link to the  recipe.   http://www.recipezaar.com/309834   

The bread above is not a no-knead; it's a recipe that I converted to sourdough. . . haven't even stored it with the others yet.

  • 2 cups proofed sourdough starter
  • 3/4 cups warm water
  • 4 cups unbleached all purpose flour 
  • 1 tablespoon olive oil
  • 1 1/2 teaspoon salt
  • 1 cup shredded parmesan cheese
  • Used the autolyse technique and it really did reduce the amount of kneading required.  Baked one loaf in a La Cloche and the other in a cast-iron pot.
