Bread in the wild


100% whole wheat, 80% hydration, first loaves from a new starter, 34 hours of fermentations.  Delicious!

Thanks so much to everyone here for inspiration and sharing knowledge.  4 weeks ago I didn't know what "crumb" meant!  Now I'm having a wonderful time baking breads that are fun and delicious and wholesome (shaping has a ways to go, though).  Go Loafians!
