I have a Convotherm oven at my shop and I was curious how long of a steam cycle should I incorporate into my baking cycle. I cannot steam for anything less than then 1 min I think 1 min is to long This oven has a manual steam inject button, i might be forced to do it manually at the beginning of my bake. Thanks for any advice.

I think 1 or 1,5 minutes is the best option. Steam makes bread really better quality. It makes it more fluffy and makes beautiful crust. Some instructions recommend 10 minutes but I don't like it after 10 minutes of steam. 1,5 minutes is perfect.
