Hi,

Very amateur bread baker here. Decided to stop lurking and instead join this lovely forum.

I have been baking bread, intermittently, for ~ 10 years. Started with a basic bread machine (a lovely gift), but switched to handmade when it died. Results were no better than "ok".

Decided towards the the end of 2019 to up my game and spend time learning how it all works, rather than just blindly following recipes. Thanks to this forum and books, everything has improved dramatically since then! I am now making consistent basic loaves (up to 30% WW, indirect) and also bagels that my family actually prefer over those from the local deli. (Wife & teenage daughter do not hold back on criticism!)

More recently I've started venturing into other forms of bread, including focaccia, Neapolitan-style pizza and paratha.

Even though I understand the science I am still constantly amazed at the massive transformation over time of flour, water, salt & yeast into airy dough. And I hope my amazement doesn't wane.

Yes it feels like magic some times. 
If your not using sourdough already I can advice you to give it a try. 
I am doing it voor two months now and I find it still amazing how you can make delicious  bread met een home grown sourdough.
