Three amigos

Weekly bread for my friends. Continuing the series of 100% red fife loaves. Hydration 78%, salt 2%. The reviews have been good. No crumb picture because they were all given away.

It's not so selfless - I get to bake a lot and don't have to eat it all ;-). My friends and I enjoy the driveway conversation during bread pickup (over 6 feet apart).

You have three very lucky friends, I still haven’t tried a 100% whole grain bread yet, I’m gradually making my way up there currently at 50%.

Hi Benny, 

I like 50% whole grain too, but I'm out of white flour. I don't think it's all that possible to learn how to make 100% ww bread by working up to it. My way was just to start making ww bread, and endure several inedible mistakes before succeeding :-). And, btw, I find I have a few 'not good, but still edible' loaves when I switch types of grain, too. 

Your bakes that I've looked at seem delicious and full of variety :-).

Hi Sumita, you’re right I probably need to jump right in at some point, I’m just not quite ready yet.  : )

Whenever I try a new recipe I usually have at least one not so great bake, the bake I did last week not withstanding.  It usually takes me a few goes at it before I’m satisfied with the bread enough to move onto something else.
