Fermentation Test using various Types of Water by Modernist Bread


I was researching water quality as it pertains to bread dough and ran upon this experiment published by Modernist Bread. Although it uses Commercial Yeast, I thought it might be of interest to others. If only the test would have used a Sourdough Culture instead.

Anyone interested in volunteering to run this experiment with SD?

Thank you! I always use filtered water so I’ll keep doing just that.

It is interesting how the different types of water seem to make so little ultimate difference.

This may be very different with SD. I had a thought that water quality may explain the glaring differences between many bakers. If only it was that easy.
