Glad to be back

Among the bread bakers!  It feels like home.  I did have to create a new account, formerly known as PaddyL, but I'm still using my convection toaster oven for all my baking, sadly.  The bread loaves I've made have been scorched top and bottom, so I'm now thinking of rolls, preferably using my starter.  Thank heaven for this site!

Can you set your toaster oven to use only the bottom heating elements?   

I use top and bottom to pre-heat, then just the bottom when cooking most things.

Another thing I've done is put aluminum foil over the bread for the first half of the bake.

Maybe the temp is too high. Try a lower temp and bake longer.  :)
