That looks to to be a dark deli-rye is it not? Great flavor combination. I'm wondering what you like for a spread to complete the tartine? Creme cheese comes to mind though it sounds too heavy to pick up the pistachio-fig flavor combination - plain butter?
The flour I used is actually white strong bread flour, but I added a minuscule amount of cocoa powder (less than 1%) for the look! I eat this bread, slightly toasted, with aged goats cheese, but that's a personal preference.
